Quaintrelle is one of the rare tasting menu restaurants left in Portland, and Rivers’ thoughtful, seasonal ingredient-driven menu is delicious from start to finish. His sauces are excellent, whether it’s smoked beurre blanc with perfectly scored grilled porcini mushrooms or little gem lettuce foam with blistered sungold tomatoes. The cheese course is a delightful surprise, and far more intricate than you might expect.
